Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (with juice)
  • ½ cup brown sugar, packed
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • 1 tablespoon cornstarch (optional, for thickening the sauce)
  • 2 green onions, sliced (for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a mixing bowl, whisk together the pineapple chunks with their juice, brown sugar, soy sauce, minced garlic, black pepper, and salt.
  3. Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for about 2-3 minutes on each side until golden.
  4. Transfer seared chicken into the baking dish and pour the pineapple mixture over the top.
  5. Bake for 25-30 minutes, or until chicken is cooked through and sauce is bubbling. For a thicker sauce, add diluted cornstarch in the last 5 minutes of baking.
