Description

A delightful sweet and savory dish that features tender chicken cooked in a rich pineapple and brown sugar sauce. Perfect for weeknight meals and family gatherings.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1/4 cup cornstarch
  • 2 tablespoons vegetable oil
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/4 cup cornstarch mixed with 1/4 cup water (slurry)
  • 2 green onions, sliced


Instructions

  1. Pat the chicken pieces dry using paper towels to achieve a golden sear.
  2. Toss the chicken in cornstarch until evenly coated.
  3. Heat vegetable oil in a skillet over medium-high heat. Sear the chicken in batches until golden brown on all sides, approximately 5 minutes per side. Remove from the skillet and set aside.
  4. In the same skillet, whisk together the pineapple chunks, brown sugar, soy sauce, rice vinegar, minced garlic, and grated ginger to create the sauce.
  5. Once the sauce starts to bubble, incorporate the cornstarch slurry and simmer until thickened, about 2 minutes.
  6. Gently toss the cooked chicken and pineapple in the sauce, coating it evenly.

Notes

For a plant-based twist, substitute chicken with firm tofu and use coconut aminos instead of soy sauce for a gluten-free option.
