Ingredients
- 1 pound boneless, skinless chicken breasts
- 1/4 cup cornstarch
- 2 tablespoons vegetable oil
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1/4 cup cornstarch mixed with 1/4 cup water (slurry)
- 2 green onions, sliced
Instructions
- Pat the chicken pieces dry using paper towels to achieve a golden sear.
- Toss the chicken in cornstarch until evenly coated.
- Heat vegetable oil in a skillet over medium-high heat. Sear the chicken in batches until golden brown on all sides, approximately 5 minutes per side. Remove from the skillet and set aside.
- In the same skillet, whisk together the pineapple chunks, brown sugar, soy sauce, rice vinegar, minced garlic, and grated ginger to create the sauce.
- Once the sauce starts to bubble, incorporate the cornstarch slurry and simmer until thickened, about 2 minutes.
- Gently toss the cooked chicken and pineapple in the sauce, coating it evenly.
Notes
For a plant-based twist, substitute chicken with firm tofu and use coconut aminos instead of soy sauce for a gluten-free option.
