Description

A sweet yet savory delight, Brown Sugar Pineapple Chicken features succulent chicken in a rich glaze of brown sugar and pineapple, perfect for any meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup brown sugar
  • 1 can (20 oz) pineapple slices in juice, drained (juice reserved)
  • 1/4 cup soy sauce
  • 1 teaspoon minced garlic
  • 1 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 1/4 cup cold water
  • 1 tablespoon olive oil
  • 2 tablespoons chopped green onions (optional for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large ovenproof skillet, heat the olive oil over medium heat.
  3. Season both sides of the chicken breasts with black pepper. Sear the chicken until golden brown, about 3-4 minutes per side. Remove from heat and set aside.
  4. In a small bowl, combine brown sugar, soy sauce, minced garlic, ground ginger, and reserved pineapple juice. Mix well until the sugar is fully dissolved.
  5. Return the seared chicken breasts to the skillet and pour the brown sugar mixture over them. Arrange the pineapple slices on top of the chicken.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and juices run clear.
  7. In a small cup, mix cornstarch and cold water until smooth.
  8. Remove the skillet from the oven, carefully transfer the chicken and pineapple slices to a serving platter, and place the skillet back on the stove over medium heat.
  9. Stir in the cornstarch mixture, cooking until the sauce thickens, about 3-5 minutes.
  10. Pour the thickened sauce over the chicken and pineapple. Garnish with chopped green onions if desired.
  11. Serve immediately with sides like rice or vegetables.

Notes

You can swap chicken for tofu for a vegetarian option or use low-sodium soy sauce for a healthier version.
