A sweet yet savory delight, Brown Sugar Pineapple Chicken features succulent chicken in a rich glaze of brown sugar and pineapple, perfect for any meal.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup brown sugar
- 1 can (20 oz) pineapple slices in juice, drained (juice reserved)
- 1/4 cup soy sauce
- 1 teaspoon minced garlic
- 1 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 2 tablespoons cornstarch
- 1/4 cup cold water
- 1 tablespoon olive oil
- 2 tablespoons chopped green onions (optional for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large ovenproof skillet, heat the olive oil over medium heat.
- Season both sides of the chicken breasts with black pepper. Sear the chicken until golden brown, about 3-4 minutes per side. Remove from heat and set aside.
- In a small bowl, combine brown sugar, soy sauce, minced garlic, ground ginger, and reserved pineapple juice. Mix well until the sugar is fully dissolved.
- Return the seared chicken breasts to the skillet and pour the brown sugar mixture over them. Arrange the pineapple slices on top of the chicken.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and juices run clear.
- In a small cup, mix cornstarch and cold water until smooth.
- Remove the skillet from the oven, carefully transfer the chicken and pineapple slices to a serving platter, and place the skillet back on the stove over medium heat.
- Stir in the cornstarch mixture, cooking until the sauce thickens, about 3-5 minutes.
- Pour the thickened sauce over the chicken and pineapple. Garnish with chopped green onions if desired.
- Serve immediately with sides like rice or vegetables.

You can swap chicken for tofu for a vegetarian option or use low-sodium soy sauce for a healthier version.
