Ingredients
- 12 oz pasta (penne or rotini)
- 1 lb chicken breast, diced
- 2 cups cherry tomatoes, halved
- 1 cup fresh basil, chopped
- 4 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- Cook the pasta according to package directions until al dente. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the diced chicken to the skillet, seasoning with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Stir in the halved cherry tomatoes and continue to cook for an additional 3-4 minutes until they soften.
- Toss in the cooked pasta and chopped basil, mixing everything to combine and heat through.
- Serve hot, topped with grated Parmesan cheese if desired.
