Description

A delightful combination of pasta with juicy tomatoes, aromatic basil, and succulent chicken, perfect for any meal.


Ingredients

  • 12 oz pasta (penne or rotini)
  • 1 lb chicken breast, diced
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh basil, chopped
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)


Instructions

  1. Cook the pasta according to package directions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the diced chicken to the skillet, seasoning with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  4. Stir in the halved cherry tomatoes and continue to cook for an additional 3-4 minutes until they soften.
  5. Toss in the cooked pasta and chopped basil, mixing everything to combine and heat through.
  6. Serve hot, topped with grated Parmesan cheese if desired.

Notes

For added flavor, consider marinating the chicken before cooking. Fresh tomatoes make a big difference in taste.
