Description

A vibrant pasta dish that combines juicy chicken with the fresh toppings reminiscent of classic bruschetta.


Ingredients

  • 8 oz pasta (penne or fusilli)
  • 2 chicken breasts, diced
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • Olive oil (for cooking)
  • Salt and pepper (to taste)
  • Optional: Parmesan cheese for serving


Instructions

  1. Begin by cooking the pasta in a large pot of salted water according to package directions. Drain and set aside.
  2. In a skillet over medium heat, heat olive oil and add the diced chicken. Season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Incorporate the cherry tomatoes and basil into the skillet, stirring well. Allow cooking for about 3-4 minutes until the tomatoes soften.
  5. Mix the cooked pasta into the chicken and tomato mixture. Stir to combine and heat through.
  6. Serve warm, topped with optional Parmesan cheese if desired.
