A delightful combination of tender chicken and robust flavors in a creamy Cajun garlic parmesan sauce.
Ingredients
- 2 large chicken breasts
- Cajun seasoning (store-bought or homemade)
- 2 tablespoons olive oil
- 8 oz linguine pasta
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Begin by cooking the linguine according to package instructions until al dente. Reserve some pasta water, then drain and set aside.
- Season chicken breasts generously with Cajun seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for about 6-7 minutes on each side or until fully cooked and juices run clear. Remove from skillet and let rest before slicing.
- Add minced garlic to the same skillet and sauté until fragrant, approximately 1 minute.
- Pour in the heavy cream, stirring constantly until warmed through. Then, add the parmesan cheese gradually while stirring until melted and creamy. Adjust seasoning with salt and pepper.
- Toss the cooked linguine into the sauce, adding a splash of reserved pasta water if necessary for consistency. Mix until fully coated.
- Slice the chicken and lay it over the pasta. Garnish with fresh parsley before serving.
Notes
For an extra flavor boost, marinate the chicken in Cajun seasoning for a few hours before cooking.
