Ingredients

  • 2 chicken breasts, diced
  • 8 ounces of penne pasta (or your choice of pasta)
  • 1 bell pepper, sliced
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream (or a plant-based alternative)
  • Olive oil
  • Salt and pepper, to taste
  • Green onions, chopped, for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced chicken, seasoning with salt, pepper, and Cajun seasoning. Cook until the chicken is browned and cooked through.
  3. Stir in the bell pepper, onion, and garlic, cooking for an additional 3-4 minutes until the vegetables are tender.
  4. Meanwhile, cook the pasta according to package instructions. Drain and set aside.
  5. Pour in the heavy cream, mixing well to combine with the chicken and vegetables. Simmer for about 5 minutes until slightly thickened.
  6. Add the cooked pasta to the skillet, tossing gently to coat everything in the creamy sauce.
  7. Adjust seasonings as needed and serve hot, garnished with chopped green onions.

Notes
