Ingredients
- 2 chicken breasts, diced
- 8 ounces of penne pasta (or your choice of pasta)
- 1 bell pepper, sliced
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream (or a plant-based alternative)
- Olive oil
- Salt and pepper, to taste
- Green onions, chopped, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced chicken, seasoning with salt, pepper, and Cajun seasoning. Cook until the chicken is browned and cooked through.
- Stir in the bell pepper, onion, and garlic, cooking for an additional 3-4 minutes until the vegetables are tender.
- Meanwhile, cook the pasta according to package instructions. Drain and set aside.
- Pour in the heavy cream, mixing well to combine with the chicken and vegetables. Simmer for about 5 minutes until slightly thickened.
- Add the cooked pasta to the skillet, tossing gently to coat everything in the creamy sauce.
- Adjust seasonings as needed and serve hot, garnished with chopped green onions.
