Ingredients
- 1 lb ground chicken (or substitute with ground turkey)
- 1 cup bell pepper, chopped
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- Salt and pepper to taste
- 4 burger buns
- Optional toppings: sliced pickles, cheese, coleslaw
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper; sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the ground chicken to the skillet. Cook until browned, breaking it apart with a spatula, about 7-10 minutes.
- Pour in the chicken broth and mix in the Cajun seasoning. Allow the mixture to simmer for about 5 minutes until it thickens slightly.
- Season with salt and pepper to taste.
- Serve the mixture on toasted burger buns, adding any optional toppings if desired.
Notes
For best flavor, let the dish simmer an extra few minutes to meld the spices with the chicken. You can also use leftover rotisserie chicken for a quick meal.
