Description

Cajun Potato and Cheddar Sausage Hand Pies are savory parcels packed with a flavorful mix of smoked sausage, vibrant vegetables, and gooey cheese, all encased in flaky pizza dough.


Ingredients

  • 4 Eckrich Cheddar Smoked Sausage Links, diced
  • 12 oz. diced breakfast potatoes
  • 10 oz. diced carrots
  • 1 tablespoon Cajun seasoning
  • 2 teaspoons kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups cheddar, jack, and/or mozzarella cheese
  • 2 refrigerated pizza dough


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the diced sausage, breakfast potatoes, carrots, Cajun seasoning, kosher salt, garlic powder, onion powder, and cheese. Toss well to combine and set aside.
  3. Roll out one pizza dough on parchment paper to a rectangle about 16 x 12 inches. Cut this dough into 16 smaller rectangles, roughly measuring 4 x 3 inches.
  4. On each rectangle, place a heaping tablespoon of the filling in the center, leaving a 1 1/4-inch border around the edges.
  5. Take the second piece of pizza dough and cut it into 16 rectangles as well. Place these on top of the filled rectangles.
  6. Use a fork to crimp the edges and seal the pies.
  7. Transfer the parchment paper with the hand pies to a baking sheet and bake them in the preheated oven for 15 minutes, or until the crust is golden brown.
  8. Once baked, remove from the oven and serve immediately.

Notes

These hand pies can be served warm or at room temperature. For added flavor, serve with a zesty dipping sauce like remoulade.
