Ingredients

  • 1 lb andouille sausage
  • 4 medium potatoes (Yukon gold or russet)
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 2 tsp Cajun spices (like paprika and cayenne)
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 4 cups chicken broth
  • Salt and pepper to taste


Instructions

  1. In a large pot, cook the andouille sausage over medium heat until browned.
  2. Add chopped onions, bell peppers, and celery to the pot; sauté until the vegetables are softened.
  3. Stir in the diced potatoes and Cajun spices; allow to cook for a few minutes to blend the flavors.
  4. Pour in the chicken broth and bring to a boil. Once boiling, reduce heat and let it simmer until the potatoes are tender.
  5. Once the potatoes are soft, add the heavy cream and cheddar cheese; stir until the cheese melts and the soup becomes creamy.
