Ingredients
- 1 lb andouille sausage
- 4 medium potatoes (Yukon gold or russet)
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 stalks celery, chopped
- 2 tsp Cajun spices (like paprika and cayenne)
- 1 cup heavy cream
- 1 cup cheddar cheese, shredded
- 4 cups chicken broth
- Salt and pepper to taste
Instructions
- In a large pot, cook the andouille sausage over medium heat until browned.
- Add chopped onions, bell peppers, and celery to the pot; sauté until the vegetables are softened.
- Stir in the diced potatoes and Cajun spices; allow to cook for a few minutes to blend the flavors.
- Pour in the chicken broth and bring to a boil. Once boiling, reduce heat and let it simmer until the potatoes are tender.
- Once the potatoes are soft, add the heavy cream and cheddar cheese; stir until the cheese melts and the soup becomes creamy.
- Season with salt and pepper to taste.
