Ingredients
- 1 lb cooked chicken, shredded
- 1 cup andouille sausage, sliced
- 1 cup shrimp, peeled and deveined
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can white beans, drained and rinsed
- 4 cups chicken broth
- 1 can diced tomatoes with green chilies
- 2 tbsp Cajun seasoning
- Salt and pepper to taste
- 1 tbsp olive oil
- Chopped cilantro for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic, sautéing until they are softened, about 3-4 minutes.
- Incorporate the sliced andouille sausage, cooking for another 3-4 minutes until lightly browned.
- Stir in the shredded chicken, shrimp, white beans, chicken broth, diced tomatoes, and Cajun seasoning.
- Allow the chili to simmer for about 20 minutes, letting the flavors meld together beautifully.
- Season with salt and pepper to taste before serving.
- Ladle into bowls and top with a sprinkle of chopped cilantro.
Notes
For a lighter version, replace the andouille sausage with turkey sausage and omit the shrimp for a chicken-only option.
