Description

A comforting bowl of Cajun White Chicken Chili featuring shredded chicken, andouille sausage, and shrimp, all melded with Cajun spices for a warm, hearty dish.


Ingredients

  • 1 lb cooked chicken, shredded
  • 1 cup andouille sausage, sliced
  • 1 cup shrimp, peeled and deveined
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 can diced tomatoes with green chilies
  • 2 tbsp Cajun seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Chopped cilantro for garnish


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, sautéing until they are softened, about 3-4 minutes.
  3. Incorporate the sliced andouille sausage, cooking for another 3-4 minutes until lightly browned.
  4. Stir in the shredded chicken, shrimp, white beans, chicken broth, diced tomatoes, and Cajun seasoning.
  5. Allow the chili to simmer for about 20 minutes, letting the flavors meld together beautifully.
  6. Season with salt and pepper to taste before serving.
  7. Ladle into bowls and top with a sprinkle of chopped cilantro.

Notes

For a lighter version, replace the andouille sausage with turkey sausage and omit the shrimp for a chicken-only option.
