Description

A warm and hearty Cajun-inspired white chicken chili that is packed with flavors and perfect for gatherings.


Ingredients

  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 bell pepper, chopped (any color)
  • 3 cloves garlic, minced
  • 2 cans white beans, drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 2 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, green onions


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and bell pepper, and sauté until softened, about 5-7 minutes.
  2. Stir in garlic, cooking for an additional minute until fragrant.
  3. Add the diced chicken, sautéing until it’s no longer pink.
  4. Incorporate the white beans, diced tomatoes, chicken broth, and Cajun seasoning. Season with salt and pepper.
  5. Bring the mixture to a boil, then reduce to a simmer. Let it cook for about 20 minutes, stirring occasionally until the chicken is tender and flavors combine.
  6. Serve hot and garnish as desired.

Notes

For a thicker chili, mash some beans in the pot for a creamier texture. Marinate chicken in Cajun spices for deeper flavor.
