A warm and hearty Cajun-inspired white chicken chili that is packed with flavors and perfect for gatherings.
Ingredients
- 1 pound boneless, skinless chicken breasts, diced
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 bell pepper, chopped (any color)
- 3 cloves garlic, minced
- 2 cans white beans, drained and rinsed
- 1 can diced tomatoes with green chilies
- 2 cups chicken broth
- 2 teaspoons Cajun seasoning
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, green onions
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and bell pepper, and sauté until softened, about 5-7 minutes.
- Stir in garlic, cooking for an additional minute until fragrant.
- Add the diced chicken, sautéing until it’s no longer pink.
- Incorporate the white beans, diced tomatoes, chicken broth, and Cajun seasoning. Season with salt and pepper.
- Bring the mixture to a boil, then reduce to a simmer. Let it cook for about 20 minutes, stirring occasionally until the chicken is tender and flavors combine.
- Serve hot and garnish as desired.
Notes
For a thicker chili, mash some beans in the pot for a creamier texture. Marinate chicken in Cajun spices for deeper flavor.
