Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup vegetable oil
- 4 large eggs
- 3 cups grated carrots
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1/4 cup unsalted butter, softened
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking pan.
- In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk together oil, eggs, grated carrots, and vanilla.
- Slowly mix the wet ingredients into the dry ingredients until just combined.
- Pour the batter into your prepared pan and spread it evenly.
- Bake for about 30 minutes or until a toothpick inserted in the center comes out clean.
- While the cake cools, beat together cream cheese, powdered sugar, butter, and lemon juice until smooth.
- Once the cake is cool, spread the cream cheese mixture on top.
- Cut into squares and enjoy!
Notes
For a healthier twist, consider replacing half the sugar with applesauce. Store in an airtight container in the refrigerator for up to a week or freeze for longer storage.
