Description

Moist carrot cake bars topped with a luscious cream cheese frosting, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon lemon juice


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking pan.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together oil, eggs, grated carrots, and vanilla.
  4. Slowly mix the wet ingredients into the dry ingredients until just combined.
  5. Pour the batter into your prepared pan and spread it evenly.
  6. Bake for about 30 minutes or until a toothpick inserted in the center comes out clean.
  7. While the cake cools, beat together cream cheese, powdered sugar, butter, and lemon juice until smooth.
  8. Once the cake is cool, spread the cream cheese mixture on top.
  9. Cut into squares and enjoy!

Notes

For a healthier twist, consider replacing half the sugar with applesauce. Store in an airtight container in the refrigerator for up to a week or freeze for longer storage.
