Description

A delightful chai spiced cake topped with rich cream cheese frosting, perfect for cozy gatherings or afternoon tea.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cardamom
  • ½ teaspoon ground cloves
  • ½ teaspoon nutmeg
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 1 cup buttermilk (or milk with lemon juice)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • Cream cheese frosting (store-bought or homemade)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a cake pan by greasing and lining it with parchment paper.
  3. In a bowl, whisk together the flour, baking powder, baking soda, spices, and sugars.
  4. In a separate bowl, combine the oil, buttermilk, eggs, and vanilla; mix until smooth.
  5. Gradually fold the wet ingredients into the dry ingredients until just combined.
  6. Pour the batter into the prepared pan, smoothing the top.
  7. Bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Allow the cake to cool completely before frosting with cream cheese frosting.

Notes

For extra moisture, add a tablespoon of brewed chai or tea to your batter. Store in an airtight container for up to three days.
