Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup Riesling wine (or similar white wine)
- 2 cups chicken broth
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken with salt and pepper, then add to the skillet. Sear until golden brown on both sides, about 5 minutes per side. Remove chicken and set aside.
- In the same skillet, add onions and garlic, cooking until softened.
- Pour in the Riesling, scraping up any browned bits from the pan. Let it simmer for 2-3 minutes.
- Stir in the chicken broth and thyme, then return the chicken to the skillet.
- Cover and simmer on low heat for about 15-20 minutes, or until the chicken is cooked through.
- Remove the chicken again and add heavy cream to the skillet, stirring until the sauce thickens slightly.
- Return the chicken to the sauce, allowing it to warm through before serving.
Notes
For a delightful presentation, serve the chicken topped with the creamy sauce and fresh parsley. Pairs well with buttery mashed potatoes or steamed asparagus.
