Ingredients
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1 cup chopped onion
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 cloves garlic, minced
- Salt and pepper to taste
- Chives for garnish
Instructions
- Cook the chopped bacon in a large pot over medium heat until crispy. Remove and set aside while leaving the drippings in the pot.
- Add the chopped onions, carrots, and celery to the pot; sauté until the veggies are soft.
- Stir in the minced garlic and cook for an additional minute.
- Pour in the chicken broth and bring it to a boil.
- Reduce the heat and stir in the heavy cream.
- Gradually add the shredded cheddar cheese, stirring continuously until melted and smooth.
- Season with salt and pepper to taste.
- Serve hot, topped with reserved crumbled bacon and a sprinkle of chives.
Notes
For added flavor, consider adding smoky paprika or cayenne pepper while cooking. Freshly shredded cheese enhances creaminess.
