Description

A rich and creamy soup with cheddar cheese and crispy bacon, perfect for chilly evenings.


Ingredients

  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chives for garnish


Instructions

  1. Cook the chopped bacon in a large pot over medium heat until crispy. Remove and set aside while leaving the drippings in the pot.
  2. Add the chopped onions, carrots, and celery to the pot; sauté until the veggies are soft.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Pour in the chicken broth and bring it to a boil.
  5. Reduce the heat and stir in the heavy cream.
  6. Gradually add the shredded cheddar cheese, stirring continuously until melted and smooth.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with reserved crumbled bacon and a sprinkle of chives.

Notes

For added flavor, consider adding smoky paprika or cayenne pepper while cooking. Freshly shredded cheese enhances creaminess.
