Ingredients
For the Chicken and Pasta:
- 1 lb chicken breasts (or thighs)
- 8 oz rotini pasta
- 2 tbsp olive oil
For the Seasoning:
- 1 tbsp Cajun seasoning (adjust to taste)
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
For the Sauce:
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 cup heavy cream (or light cream/coconut milk)
- 1 cup chicken broth (or vegetable broth)
For the Cheesy Goodness:
- 1 cup mozzarella cheese
- ½ cup Parmesan cheese
- ½ cup cheddar cheese
For Garnish:
- ¼ cup chopped fresh parsley
Instructions
- Cook rotini in salted boiling water for 8–10 minutes until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
- Sear chicken for 6–7 minutes per side until golden and cooked through. Remove from skillet and let rest.
- In the same skillet, melt butter and sauté minced garlic until fragrant.
- Add chicken broth and heavy cream. Simmer for 2–3 minutes to slightly thicken.
- Stir in mozzarella, Parmesan, and cheddar cheese until melted and creamy.
- Slice chicken and return it to the skillet with the cooked rotini. Toss to coat evenly.
- Garnish with fresh parsley and serve hot.
Notes
- Add extra vegetables such as bell peppers, spinach, or mushrooms for more color and nutrition.
- Adjust the Cajun seasoning to your spice tolerance—start mild and build up as desired.
- For a lighter version, swap heavy cream for half-and-half or evaporated milk.
- Shred cheese from the block instead of using pre-shredded for a smoother sauce.
- If the sauce thickens too much, stir in a splash of broth or milk before serving.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat with a touch of milk or cream to keep it creamy.
