Ingredients

For the Chicken and Pasta:

  • 1 lb chicken breasts (or thighs)
  • 8 oz rotini pasta
  • 2 tbsp olive oil

For the Seasoning:

  • 1 tbsp Cajun seasoning (adjust to taste)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

For the Sauce:

  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 cup heavy cream (or light cream/coconut milk)
  • 1 cup chicken broth (or vegetable broth)

For the Cheesy Goodness:

  • 1 cup mozzarella cheese
  • ½ cup Parmesan cheese
  • ½ cup cheddar cheese

For Garnish:

  • ¼ cup chopped fresh parsley


Instructions

  1. Cook rotini in salted boiling water for 8–10 minutes until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  3. Sear chicken for 6–7 minutes per side until golden and cooked through. Remove from skillet and let rest.
  4. In the same skillet, melt butter and sauté minced garlic until fragrant.
  5. Add chicken broth and heavy cream. Simmer for 2–3 minutes to slightly thicken.
  6. Stir in mozzarella, Parmesan, and cheddar cheese until melted and creamy.
  7. Slice chicken and return it to the skillet with the cooked rotini. Toss to coat evenly.
  8. Garnish with fresh parsley and serve hot.
