Description

A comforting dish of succulent chicken, vibrant spices, and creamy rotini, perfect for cozy nights.


Ingredients

  • 8 oz rotini pasta
  • 1 lb boneless, skinless chicken breast
  • 2 tbsp Cajun seasoning
  • 3 cloves garlic, minced
  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 2 green onions, chopped


Instructions

  1. Boil salted water and cook rotini until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces and season with Cajun seasoning. Sear until golden and cooked through. Remove from the skillet.
  3. In the same skillet, add garlic and sauté for a minute until fragrant. Incorporate cream cheese and chicken broth, stirring until smooth.
  4. Add cooked rotini and chicken back into the skillet; mix well to coat everything in the sauce.
  5. Stir in shredded cheddar cheese until melted. Adjust seasoning as needed.
  6. Garnish with chopped green onions before serving.

Notes

For extra flavor, marinate chicken in Cajun seasoning mixed with olive oil for 30 minutes prior to cooking.
