Ingredients
- 8 oz rotini pasta
- 1 lb boneless, skinless chicken breast
- 2 tbsp Cajun seasoning
- 3 cloves garlic, minced
- 8 oz cream cheese
- 1 cup shredded cheddar cheese
- 1 cup chicken broth
- 2 tbsp olive oil
- 2 green onions, chopped
Instructions
- Boil salted water and cook rotini until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add chicken pieces and season with Cajun seasoning. Sear until golden and cooked through. Remove from the skillet.
- In the same skillet, add garlic and sauté for a minute until fragrant. Incorporate cream cheese and chicken broth, stirring until smooth.
- Add cooked rotini and chicken back into the skillet; mix well to coat everything in the sauce.
- Stir in shredded cheddar cheese until melted. Adjust seasoning as needed.
- Garnish with chopped green onions before serving.
Notes
For extra flavor, marinate chicken in Cajun seasoning mixed with olive oil for 30 minutes prior to cooking.
