Perfectly wrapped burritos combining tender chicken, creamy avocado, and zesty ranch for a satisfying meal.
Ingredients
- 2 cups cooked chicken, shredded or diced
- 1 ripe avocado, mashed
- ½ cup ranch dressing
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large tortillas
- 1 cup lettuce, shredded
- Optional: diced tomatoes and sliced olives for garnish
Instructions
- In a bowl, combine the shredded chicken with mashed avocado and ranch dressing until well mixed.
- Lay a tortilla flat and add a portion of the chicken mixture, followed by shredded cheese and lettuce.
- Fold in the sides of the tortilla and then roll it up tightly from the bottom.
- Heat a skillet over medium heat, and cook the burritos seam-side down until golden brown, about 3 minutes on each side.
- Optionally, cut them in half for easier serving.
Notes
These burritos can be stored in the refrigerator for up to four days or frozen for up to three months. Reheat on a skillet for best texture.
