Description

Perfectly wrapped burritos combining tender chicken, creamy avocado, and zesty ranch for a satisfying meal.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 ripe avocado, mashed
  • ½ cup ranch dressing
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large tortillas
  • 1 cup lettuce, shredded
  • Optional: diced tomatoes and sliced olives for garnish


Instructions

  1. In a bowl, combine the shredded chicken with mashed avocado and ranch dressing until well mixed.
  2. Lay a tortilla flat and add a portion of the chicken mixture, followed by shredded cheese and lettuce.
  3. Fold in the sides of the tortilla and then roll it up tightly from the bottom.
  4. Heat a skillet over medium heat, and cook the burritos seam-side down until golden brown, about 3 minutes on each side.
  5. Optionally, cut them in half for easier serving.

Notes

These burritos can be stored in the refrigerator for up to four days or frozen for up to three months. Reheat on a skillet for best texture.
