Description
A comforting casserole that combines the favorite flavors of tacos with seasoned chicken, beans, and gooey cheese.
Ingredients
- 2 cups cooked, shredded chicken
- 1 can black beans, rinsed and drained
- 1 cup corn (frozen or canned)
- 1 packet taco seasoning
- 1 can diced tomatoes with green chilies
- 2 cups shredded cheese (cheddar or Mexican blend)
- 8 small flour or corn tortillas
- Optional toppings: sour cream, fresh cilantro, avocado
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, black beans, corn, taco seasoning, and diced tomatoes.
- Spread a small amount of the chicken mixture on the bottom of a baking dish.
- Layer four tortillas over the mixture, followed by half of the remaining chicken mixture and one cup of cheese.
- Repeat the layering with the remaining tortillas, chicken mixture, and cheese.
- Cover the dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
Notes
For an extra kick, add diced jalapeños or hot sauce to the chicken mixture. Leftovers can be stored in an airtight container in the fridge for up to three days.
