Ingredients
- 2 boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- 12 oz twisted pasta (such as fusilli or rotini)
- 2 tablespoons butter
- 3 cloves garlic, minced
- 2 cups milk
- 8 oz Velveeta cheese, cubed
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh parsley
Instructions
- Cook the twisted pasta according to package instructions. Once cooked, drain and set aside.
- Season the chicken pieces with garlic powder, onion powder, salt, and pepper.
- Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken, cooking until golden brown and fully cooked through, roughly 5-7 minutes. Remove the chicken and set aside.
- In the same skillet, add the butter and melt it over medium heat. Once melted, add the minced garlic and sauté for about 1 minute, just until fragrant.
- Whisk in the milk and bring it to a gentle simmer. Gradually add the cubed Velveeta cheese, stirring until melted and smooth.
- Mix in the shredded cheddar cheese until fully melted, creating a thick, creamy sauce.
- Return the cooked pasta and chicken to the skillet, stirring until well-coated in the cheese sauce. Let it heat through for an additional 2-3 minutes.
- Finish with fresh parsley stirred in, ready to serve.
Notes
For added flavor, incorporate fresh herbs like basil or thyme while cooking the sauce. If desired, add broccoli or spinach for a nutritional boost.
