Description

Ingredients

  • 4 eggs, beaten
  • 1 bell pepper, diced
  • 1 small onion, chopped
  • 1 cup spinach, shredded
  • 1 cup cheese, shredded (cheddar or mozzarella)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional herbs (parsley or chives, for garnish)


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and bell pepper, sautéing until softened, about 3-4 minutes.
  3. Stir in the spinach and cook until wilted.
  4. Pour in the beaten eggs; season with salt and pepper.
  5. Gently stir as the eggs begin to set, then sprinkle cheese on top.
  6. Cover the skillet and cook until the cheese is melted and eggs are fully cooked, approximately 3-5 minutes.
