Description

A comforting casserole combining seasoned ground beef, melted cheese, and fluffy rice, perfect for family gatherings.


Ingredients

  • 1 pound ground beef
  • 1 cup long-grain rice
  • 2 cups beef broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 can diced tomatoes (with juices)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional: chopped bell peppers or corn


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef until it’s thoroughly cooked. Drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet, cooking until softened.
  4. Stir in the diced tomatoes, rice, beef broth, chili powder, cumin, salt, and pepper. Bring to a simmer.
  5. Once the liquid is absorbed, remove from heat and mix in half of the shredded cheese.
  6. Transfer the mixture to a greased baking dish, spreading it evenly. Top with the remaining cheese.
  7. Bake for 20 minutes or until the cheese is bubbly and golden.

Notes

Pairs well with a fresh salad, crusty bread, or seasoned vegetables. For added flavor, consider toppings like sour cream or avocado.
