Ingredients
- 1 pound ground beef
- 1 cup long-grain rice
- 2 cups beef broth
- 1 cup shredded cheese (cheddar or your choice)
- 1 can diced tomatoes (with juices)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional: chopped bell peppers or corn
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef until it’s thoroughly cooked. Drain any excess fat.
- Add the chopped onion and minced garlic to the skillet, cooking until softened.
- Stir in the diced tomatoes, rice, beef broth, chili powder, cumin, salt, and pepper. Bring to a simmer.
- Once the liquid is absorbed, remove from heat and mix in half of the shredded cheese.
- Transfer the mixture to a greased baking dish, spreading it evenly. Top with the remaining cheese.
- Bake for 20 minutes or until the cheese is bubbly and golden.
