A warm and hearty casserole combining savory ground beef, rice, and cheese for a comforting family meal.
Ingredients
- 1 pound ground beef
- 1 cup uncooked rice (white or brown)
- 1 can (15 oz) diced tomatoes, undrained
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese (or cheese blend)
- 1 medium onion, diced
- 1 cup beef broth
- Salt and pepper, to taste
- Optional: chopped bell peppers or corn for added flavor
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion is translucent. Drain any excess fat.
- Stir in the diced tomatoes, cream of mushroom soup, uncooked rice, and beef broth. Season with salt and pepper.
- Bring the mixture to a simmer, then cover and cook for about 5 minutes, allowing the rice to absorb some liquid.
- Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the shredded cheese evenly on top.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil during the last 10 minutes for a bubbly, golden cheesy top.
Notes
Enhance flavor with different cheese blends or spices. Serve with a salad or bread for a complete meal.
