Description

A warm and hearty casserole combining savory ground beef, rice, and cheese for a comforting family meal.


Ingredients

  • 1 pound ground beef
  • 1 cup uncooked rice (white or brown)
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese (or cheese blend)
  • 1 medium onion, diced
  • 1 cup beef broth
  • Salt and pepper, to taste
  • Optional: chopped bell peppers or corn for added flavor


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion is translucent. Drain any excess fat.
  3. Stir in the diced tomatoes, cream of mushroom soup, uncooked rice, and beef broth. Season with salt and pepper.
  4. Bring the mixture to a simmer, then cover and cook for about 5 minutes, allowing the rice to absorb some liquid.
  5. Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the shredded cheese evenly on top.
  6. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil during the last 10 minutes for a bubbly, golden cheesy top.

Notes

Enhance flavor with different cheese blends or spices. Serve with a salad or bread for a complete meal.
