Description

A hearty and comforting one-pot casserole made with ground beef, rice, and melty cheese, perfect for weeknight dinners.


Ingredients

  • 1 pound ground beef
  • 1 cup rice (white or brown)
  • 2 cups beef broth or water
  • 1 onion, chopped
  • 2 cups shredded cheese (cheddar, mozzarella, or a mix)
  • 1 can (15 oz) diced tomatoes (optional)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning (optional)
  • 1 tablespoon olive oil


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Toss in the chopped onion and sauté until it’s soft and translucent.
  3. Add the ground beef to the skillet. Cook it until browned, stirring occasionally to break it apart. Drain the excess fat.
  4. Mix in the rice, beef broth, garlic powder, salt, pepper, and Italian seasoning. If you’re using diced tomatoes, add them at this stage.
  5. Bring the mixture to a gentle simmer and cook for about 5 minutes.
  6. Transfer the mixture into a baking dish and sprinkle the shredded cheese on top.
  7. Bake in your preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Allow it to cool for a few minutes before serving.

Notes

Feel free to substitute ground beef with turkey or a plant-based alternative for a lighter twist. For added flavor, consider incorporating different cheeses or vegetables.
