A hearty and comforting one-pot casserole made with ground beef, rice, and melty cheese, perfect for weeknight dinners.
Ingredients
- 1 pound ground beef
- 1 cup rice (white or brown)
- 2 cups beef broth or water
- 1 onion, chopped
- 2 cups shredded cheese (cheddar, mozzarella, or a mix)
- 1 can (15 oz) diced tomatoes (optional)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 teaspoon Italian seasoning (optional)
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Toss in the chopped onion and sauté until it’s soft and translucent.
- Add the ground beef to the skillet. Cook it until browned, stirring occasionally to break it apart. Drain the excess fat.
- Mix in the rice, beef broth, garlic powder, salt, pepper, and Italian seasoning. If you’re using diced tomatoes, add them at this stage.
- Bring the mixture to a gentle simmer and cook for about 5 minutes.
- Transfer the mixture into a baking dish and sprinkle the shredded cheese on top.
- Bake in your preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Allow it to cool for a few minutes before serving.
Notes
Feel free to substitute ground beef with turkey or a plant-based alternative for a lighter twist. For added flavor, consider incorporating different cheeses or vegetables.
