Description
Delicious and satisfying quesadillas filled with shredded chicken, creamy ranch, and melty cheese.
Ingredients
- 2 cups cooked chicken breast, shredded
- 4 tortillas (flour or whole wheat)
- 1/2 cup ranch dressing
- 1 cup shredded cheese (cheddar or a blend)
- 1/4 cup green onions, chopped (optional)
- 2 tablespoons olive oil or butter, for cooking
Instructions
- Heat a skillet over medium heat and add a little olive oil or butter.
- Spread ranch dressing on one side of a tortilla.
- Layer shredded chicken over the ranch, followed by shredded cheese and green onions.
- Fold the tortilla in half and place it in the skillet.
- Cook for about 3-4 minutes, or until the bottom is golden brown.
- Flip and cook the other side until golden and the cheese is melted.
- Remove from heat and repeat with remaining tortillas.
- Slice into wedges and serve warm.
Notes
Serve with fresh guacamole, salsa, or a crisp salad for a complete meal. Store leftovers in an airtight container for up to three days.
