Description

Delicious and satisfying quesadillas filled with shredded chicken, creamy ranch, and melty cheese.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 4 tortillas (flour or whole wheat)
  • 1/2 cup ranch dressing
  • 1 cup shredded cheese (cheddar or a blend)
  • 1/4 cup green onions, chopped (optional)
  • 2 tablespoons olive oil or butter, for cooking


Instructions

  1. Heat a skillet over medium heat and add a little olive oil or butter.
  2. Spread ranch dressing on one side of a tortilla.
  3. Layer shredded chicken over the ranch, followed by shredded cheese and green onions.
  4. Fold the tortilla in half and place it in the skillet.
  5. Cook for about 3-4 minutes, or until the bottom is golden brown.
  6. Flip and cook the other side until golden and the cheese is melted.
  7. Remove from heat and repeat with remaining tortillas.
  8. Slice into wedges and serve warm.

Notes

Serve with fresh guacamole, salsa, or a crisp salad for a complete meal. Store leftovers in an airtight container for up to three days.
