Ingredients
- 4 large russet potatoes
- 3 cloves garlic, minced
- 1 medium onion, diced
- 2 cups heavy cream
- 4 cups broth (chicken or vegetable)
- 6 slices crispy bacon, cooked and crumbled
- 1 cup shredded cheese (cheddar or cheese blend)
- 2 green onions, sliced
Instructions
- Peel and dice the russet potatoes into small cubes.
- In a large pot over medium heat, sauté the diced onions and minced garlic in a splash of olive oil until fragrant, about 3 minutes.
- Add the diced potatoes and pour in the broth. Bring the mixture to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
- Stir in the heavy cream and use a potato masher to mash some of the potatoes for a thicker texture.
- Serve the soup hot, garnished with crispy bacon, shredded cheese, and a sprinkle of green onions.
Notes
For a lighter version, substitute half-and-half for heavy cream and turkey bacon for a healthier twist.
