Description

A creamy and comforting soup made with tender potatoes, crispy bacon, and melted cheese, perfect for chilly evenings.


Ingredients

  • 4 large russet potatoes
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 2 cups heavy cream
  • 4 cups broth (chicken or vegetable)
  • 6 slices crispy bacon, cooked and crumbled
  • 1 cup shredded cheese (cheddar or cheese blend)
  • 2 green onions, sliced


Instructions

  1. Peel and dice the russet potatoes into small cubes.
  2. In a large pot over medium heat, sauté the diced onions and minced garlic in a splash of olive oil until fragrant, about 3 minutes.
  3. Add the diced potatoes and pour in the broth. Bring the mixture to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
  4. Stir in the heavy cream and use a potato masher to mash some of the potatoes for a thicker texture.
  5. Serve the soup hot, garnished with crispy bacon, shredded cheese, and a sprinkle of green onions.

Notes

For a lighter version, substitute half-and-half for heavy cream and turkey bacon for a healthier twist.
