Ingredients
- 4 large eggs
- 2 medium-sized potatoes, peeled and diced
- 1 cup shredded cheese (cheddar or your choice)
- 6 small tortillas (corn or flour)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional toppings: diced avocado, salsa, or chopped cilantro
Instructions
- Heat olive oil in a skillet over medium heat. Add the diced potatoes and cook until golden brown and tender, about 10 minutes, stirring occasionally.
- While the potatoes are cooking, whisk the eggs in a bowl with salt and pepper.
- Pour the eggs into the skillet with the potatoes, gently scrambling them together until the eggs are set.
- Remove from heat and stir in the shredded cheese until melted.
- Warm the tortillas in another skillet or microwave, then fill each tortilla with the egg and potato mixture.
- Add your favorite toppings before folding the tortillas.
Notes
