Description

Delicious breakfast tacos filled with fluffy eggs, tender potatoes, and melted cheese, perfect for a cozy morning.


Ingredients

  • 4 large eggs
  • 2 medium-sized potatoes, peeled and diced
  • 1 cup shredded cheese (cheddar or your choice)
  • 6 small tortillas (corn or flour)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: diced avocado, salsa, or chopped cilantro


Instructions

  1. Heat olive oil in a skillet over medium heat. Add the diced potatoes and cook until golden brown and tender, about 10 minutes, stirring occasionally.
  2. While the potatoes are cooking, whisk the eggs in a bowl with salt and pepper.
  3. Pour the eggs into the skillet with the potatoes, gently scrambling them together until the eggs are set.
  4. Remove from heat and stir in the shredded cheese until melted.
  5. Warm the tortillas in another skillet or microwave, then fill each tortilla with the egg and potato mixture.
  6. Add your favorite toppings before folding the tortillas.

Notes

Serve with a side of fresh fruit or a light salad. Leftovers can be stored in an airtight container for up to three days.
