Description

A cheesy, savory dish combining tacos and potatoes, perfect for weeknight dinners or gatherings.


Ingredients

  • 4 medium-sized potatoes, peeled and diced
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or a mix)
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup diced onion
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat the olive oil over medium heat in a large skillet. Sauté the onions until translucent, about 3-4 minutes.
  3. Add the ground beef and cook until browned. Drain excess fat.
  4. Stir in the taco seasoning, black beans, and corn. Mix well and let simmer for 5 minutes.
  5. Combine the diced potatoes, beef mixture, and half of the cheese in a large bowl. Season with salt and pepper.
  6. Transfer the mixture into a greased baking dish, spreading evenly. Top with the remaining cheese.
  7. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 5-10 minutes until bubbly and golden.
  8. Allow to cool for a few minutes before serving.

Notes

Try cutting potatoes into uniform pieces for even cooking. For a crispier top, broil for a minute or two at the end.
