A delightful breakfast casserole combining tater tots, ground beef, and cheese, perfect for brunch gatherings.
Ingredients
- 1 package of frozen tater tots
- 1 pound of ground beef
- 1 onion, chopped
- 2 cups shredded cheddar cheese
- 6 large eggs
- 1 cup milk
- Salt and pepper, to taste
- Optional: diced bell peppers or spinach
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef and onion over medium heat until fully browned. Drain excess fat.
- In a large bowl, whisk together eggs, milk, salt, and pepper.
- In a greased baking dish, layer half of the tater tots, followed by the beef mixture, half of the cheese, and the remaining tater tots.
- Pour the egg mixture evenly over the casserole. Top with the remaining cheese.
- Bake for 30-35 minutes, or until the eggs are set and the cheese is bubbly.
Notes
Serve warm, garnished with fresh herbs. Pair with fruit salad or pastries for a complete meal.
