Description

A delightful breakfast casserole combining tater tots, ground beef, and cheese, perfect for brunch gatherings.


Ingredients

  • 1 package of frozen tater tots
  • 1 pound of ground beef
  • 1 onion, chopped
  • 2 cups shredded cheddar cheese
  • 6 large eggs
  • 1 cup milk
  • Salt and pepper, to taste
  • Optional: diced bell peppers or spinach


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and onion over medium heat until fully browned. Drain excess fat.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper.
  4. In a greased baking dish, layer half of the tater tots, followed by the beef mixture, half of the cheese, and the remaining tater tots.
  5. Pour the egg mixture evenly over the casserole. Top with the remaining cheese.
  6. Bake for 30-35 minutes, or until the eggs are set and the cheese is bubbly.

Notes

Serve warm, garnished with fresh herbs. Pair with fruit salad or pastries for a complete meal.
