This sandwich elevates a classic meal by balancing the heartiness of chicken with the creamy richness of avocado.
Ingredients
- 1 cup cooked chicken, shredded or diced
- 1 ripe avocado
- 2 oz cream cheese
- Fresh herbs (cilantro or parsley)
- 1 cup cheese of choice (mozzarella or gouda)
- 2 slices of bread (sourdough, whole grain, or preferred type)
- Salt and pepper, to taste
- Optional: hot sauce or lemon juice for zest
Instructions
- In a bowl, mash the avocado and blend in the cream cheese. Season with salt, pepper, and any desired hot sauce or lemon juice.
- Spread the avocado mixture generously on one slice of your chosen bread.
- Layer on the chicken followed by cheese and sprinkle fresh herbs.
- Top with another slice of bread and grill in a pan until golden brown and the cheese melts, about 3-4 minutes per side.
- Slice in half and serve hot.
Notes
For a crispy finish, butter the outside of the bread before grilling for a golden crust. Customize by adding sliced tomatoes or switching chicken for turkey or chickpeas.
