Description

This sandwich elevates a classic meal by balancing the heartiness of chicken with the creamy richness of avocado.


Ingredients

  • 1 cup cooked chicken, shredded or diced
  • 1 ripe avocado
  • 2 oz cream cheese
  • Fresh herbs (cilantro or parsley)
  • 1 cup cheese of choice (mozzarella or gouda)
  • 2 slices of bread (sourdough, whole grain, or preferred type)
  • Salt and pepper, to taste
  • Optional: hot sauce or lemon juice for zest


Instructions

  1. In a bowl, mash the avocado and blend in the cream cheese. Season with salt, pepper, and any desired hot sauce or lemon juice.
  2. Spread the avocado mixture generously on one slice of your chosen bread.
  3. Layer on the chicken followed by cheese and sprinkle fresh herbs.
  4. Top with another slice of bread and grill in a pan until golden brown and the cheese melts, about 3-4 minutes per side.
  5. Slice in half and serve hot.

Notes

For a crispy finish, butter the outside of the bread before grilling for a golden crust. Customize by adding sliced tomatoes or switching chicken for turkey or chickpeas.
