Description

A comforting and flavorful chicken dish that impresses with its delightful presentation and burst of flavors.


Ingredients

  • 4 chicken thighs or breasts
  • Salt and pepper (to taste)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 can diced tomatoes
  • Fresh basil for garnish


Instructions

  1. Season the chicken with salt, pepper, and smoked paprika. Set aside to marinate for a few minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and brown both sides for about 5-7 minutes.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the chopped onion and cook until softened, about 3 minutes. Then add minced garlic and sliced bell pepper, cooking for another 2-3 minutes.
  5. Return the chicken to the skillet, add the can of diced tomatoes and oregano. Reduce heat and let it simmer for about 20 minutes, or until the chicken is thoroughly cooked.
  6. Garnish with fresh basil before serving.

Notes

For extra flavor, add a splash of white wine after sautéing the onion and garlic. Marinate the chicken overnight for a richer taste.
