Ingredients
- 1 ½ lbs boneless, skinless chicken breast, sliced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 bell pepper (red, green, or yellow), sliced
- 1 onion, thinly sliced
- Flour or corn tortillas
- Optional toppings: avocado, salsa, shredded cheese, cilantro
Instructions
- Mix the olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper in a medium bowl. Add the sliced chicken and toss to coat evenly. Let it marinate for at least 15 minutes.
- Heat a large skillet over medium-high heat. Once hot, add the marinated chicken in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
- Add the sliced bell pepper and onion to the skillet. Continue to cook for about 5 more minutes, until the veggies are tender and slightly caramelized.
- Warm your tortillas in a separate pan or in the microwave.
- Serve the chicken and veggie mixture in the warmed tortillas, adding any optional toppings as desired.
Notes
