Description

A vibrant and hearty one-pot meal featuring marinated chicken, colorful veggies, and fluffy rice, capturing the essence of classic fajitas.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 bell peppers (red, yellow, green)
  • 1 sweet or yellow onion
  • 3 cups cooked rice (white, brown, or jasmine)
  • 2 tablespoons fajita seasoning
  • 2 tablespoons oil (canola or olive)
  • Optional toppings: avocado, cilantro, lime wedges

Instructions

  1. Marinate the chicken in fajita seasoning and a splash of oil. Let it sit for at least 15 minutes.
  2. Cook the marinated chicken in a heated skillet until golden and cooked through. Remove and let it rest.
  3. Sauté onions and bell peppers in the same skillet until tender and slightly crispy, adding more oil if needed.
  4. Stir in the cooked rice, return the chicken to the pan, and mix everything thoroughly.
  5. Cook for a few more minutes to allow the rice to absorb the vibrant colors and spices, then serve hot.
  6. Top with optional toppings like avocado and lime for added freshness.

Notes

Slice the chicken against the grain for tenderness and consider using leftover rice for a quicker meal. Adjust seasoning to control spice levels.
