Description

A comforting pot pie filled with tender chicken, creamy sauce, and pillowy gnocchi.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup gnocchi
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream or low-fat alternative
  • 1 tsp thyme
  • Salt and pepper to taste
  • 1 ready-made pie crust (store-bought or homemade)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, sauté the onions and garlic until translucent.
  3. Add the diced chicken, cooking until it’s no longer pink.
  4. Stir in the mixed vegetables, thyme, salt, and pepper.
  5. Pour in the chicken broth and bring to a simmer.
  6. Mix in the heavy cream and gnocchi, allowing to thicken slightly.
  7. Transfer the mixture to a pie dish, and cover with the pie crust.
  8. Cut slits in the crust for steam to escape.
  9. Bake for about 25-30 minutes, or until the crust is golden brown.

Notes

Serve with a light salad and a glass of white wine. For extra freshness, sprinkle with chopped parsley or chives before serving.
