Description
A comforting pot pie filled with tender chicken, creamy sauce, and pillowy gnocchi.
Ingredients
- 1 lb chicken breast, diced
- 1 cup gnocchi
- 1 cup mixed vegetables (carrots, peas, corn)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream or low-fat alternative
- 1 tsp thyme
- Salt and pepper to taste
- 1 ready-made pie crust (store-bought or homemade)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, sauté the onions and garlic until translucent.
- Add the diced chicken, cooking until it’s no longer pink.
- Stir in the mixed vegetables, thyme, salt, and pepper.
- Pour in the chicken broth and bring to a simmer.
- Mix in the heavy cream and gnocchi, allowing to thicken slightly.
- Transfer the mixture to a pie dish, and cover with the pie crust.
- Cut slits in the crust for steam to escape.
- Bake for about 25-30 minutes, or until the crust is golden brown.
Notes
Serve with a light salad and a glass of white wine. For extra freshness, sprinkle with chopped parsley or chives before serving.
