Description

A vibrant and refreshing chicken pasta salad, perfect for picnics and gatherings, combining tender chicken, al dente pasta, and crisp vegetables.


Ingredients

  • 2 cups of your favorite pasta (fusilli or penne)
  • 2 cups cooked, shredded or diced chicken
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, chopped
  • ½ cup feta or mozzarella, diced
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh basil or parsley, chopped (optional for garnish)


Instructions

  1. Cook the Pasta: In a large pot, boil salted water and cook the pasta according to package instructions. Drain and rinse under cold water.
  2. Prepare the Chicken: If you haven’t cooked the chicken yet, season it with salt and pepper, then grill or sauté until cooked. Allow to cool, then shred or dice.
  3. Chop the Vegetables: While the pasta cools, chop the cherry tomatoes, cucumber, and bell pepper into bite-sized pieces.
  4. Mix it All Together: In a large bowl, combine the cooled pasta, chicken, vegetables, and cheese.
  5. Dress the Salad: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Drizzle over the salad and toss gently.
  6. Garnish and Serve: Top with fresh herbs if desired. Enjoy chilled or at room temperature!

Notes

This salad tastes better when made ahead. Add delicate ingredients just before serving.
