Ingredients
- 2 cups of your favorite pasta (fusilli or penne)
- 2 cups cooked, shredded or diced chicken
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 bell pepper, chopped
- ½ cup feta or mozzarella, diced
- ¼ cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Fresh basil or parsley, chopped (optional for garnish)
Instructions
- Cook the Pasta: In a large pot, boil salted water and cook the pasta according to package instructions. Drain and rinse under cold water.
- Prepare the Chicken: If you haven’t cooked the chicken yet, season it with salt and pepper, then grill or sauté until cooked. Allow to cool, then shred or dice.
- Chop the Vegetables: While the pasta cools, chop the cherry tomatoes, cucumber, and bell pepper into bite-sized pieces.
- Mix it All Together: In a large bowl, combine the cooled pasta, chicken, vegetables, and cheese.
- Dress the Salad: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Drizzle over the salad and toss gently.
- Garnish and Serve: Top with fresh herbs if desired. Enjoy chilled or at room temperature!
