Ingredients
- 2 chicken breasts
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 lemon (juiced and zested)
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup uncooked rice
- 2 cups water
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season both sides of the chicken breasts with salt and pepper.
- Melt the butter in a skillet over medium heat, then add the chicken. Cook for about 6-7 minutes per side, until golden brown and thoroughly cooked. Once done, take it out and set aside.
- In the same skillet, toss in the minced garlic and sauté for about 1 minute until aromatic.
- Pour in the chicken broth, lemon juice, and lemon zest. Bring this mixture to a gentle simmer.
- Incorporate the heavy cream and Parmesan cheese, stirring until well blended. Return the chicken to the pan, coating it with the sauce, and let it simmer for a few minutes more.
- While the chicken simmers, bring 2 cups of water to a boil in a separate saucepan. Add the rice, reduce the heat to low, cover, and let it cook for 18-20 minutes or until tender.
- Once the rice is cooked, fold in some grated Parmesan for extra flavor.
- Serve the chicken scampi over the garlic Parmesan rice, garnished with fresh parsley.
Notes
For an added flavor boost, marinate the chicken in lemon juice and herbs for an hour before cooking. Serve with a crisp white wine.
