Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 cup long-grain rice
- Fresh parsley, chopped (for garnish)
- 1/2 cup parmesan cheese, grated
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper before placing them in the skillet. Cook until browned, about 5–7 minutes per side. Remove and set aside.
- In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
- Stir in the rice and cook for another minute, allowing it to become slightly toasted.
- Pour in the chicken broth and bring to a simmer. Reduce heat to low, returning the chicken to the skillet.
- Cover and cook for 20 minutes, or until the rice is tender and has absorbed the liquid.
- Remove from heat and mix in the grated parmesan until fully incorporated.
- Garnish with fresh parsley before serving.
Notes
For added nutrition, serve with a side salad or steamed vegetables. Leftovers can be stored in an airtight container for up to 3 days.
