Description

A North African-inspired roasted chicken dish with bold flavors and a creamy garlic sauce, perfect for gatherings and family meals.


Ingredients

  • 4 chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 2 tablespoons lemon juice
  • 1/2 cup Greek yogurt (or vegan yogurt)
  • Salt and pepper, to taste
  • Fresh parsley, for garnish


Instructions

  1. Marinate the chicken: In a bowl, combine olive oil, minced garlic, spices, lemon juice, salt, and pepper. Add the chicken thighs and coat them well. Let marinate for at least 30 minutes (or overnight for maximum flavor).
  2. Preheat the oven: Set your oven to 425°F (220°C).
  3. Bake the chicken: Place the marinated chicken on a baking sheet. Roast for 25-30 minutes or until the chicken is cooked through and the skin is crispy.
  4. Prepare the garlic sauce: In a small bowl, whisk together Greek yogurt and minced garlic. Add a pinch of salt and lemon juice for flavor.
  5. Serve: Once the chicken is done, let it rest for a few minutes before slicing. Serve with the garlic sauce drizzled on top.

Notes

For added freshness, pair with pita bread or a cucumber salad. Leftovers can be stored in an airtight container for up to three days.
