Description

A vibrant and customizable Mexican-inspired rice bowl featuring seasoned beef, fresh veggies, and your favorite toppings.


Ingredients

  • 1 cup rice (white or brown)
  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade)
  • 1 can black beans (drained)
  • 1 cup corn (canned or frozen)
  • 1 cup cherry tomatoes (halved)
  • 1 avocado (diced)
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • Salsa or pico de gallo
  • Lime wedges (for serving)


Instructions

  1. Begin by cooking the rice according to package instructions. Set aside once fluffy.
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat if necessary.
  3. Stir in the taco seasoning and a bit of water, simmering until thickened.
  4. Fold in the black beans and corn until heated through.
  5. Assemble the bowls: start with a base of rice, add the beef mixture, and top with tomatoes, avocado, lettuce, and cheese.
  6. Finish with salsa and a squeeze of lime.

Notes

For a healthier twist, swap rice for quinoa or cauliflower rice. Store leftovers separately in airtight containers to keep them fresh.
