Ingredients
- 1 cup rice (white or brown)
- 1 lb ground beef
- 1 packet taco seasoning (or homemade)
- 1 can black beans (drained)
- 1 cup corn (canned or frozen)
- 1 cup cherry tomatoes (halved)
- 1 avocado (diced)
- 1 cup shredded lettuce
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- Salsa or pico de gallo
- Lime wedges (for serving)
Instructions
- Begin by cooking the rice according to package instructions. Set aside once fluffy.
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat if necessary.
- Stir in the taco seasoning and a bit of water, simmering until thickened.
- Fold in the black beans and corn until heated through.
- Assemble the bowls: start with a base of rice, add the beef mixture, and top with tomatoes, avocado, lettuce, and cheese.
- Finish with salsa and a squeeze of lime.
Notes
For a healthier twist, swap rice for quinoa or cauliflower rice. Store leftovers separately in airtight containers to keep them fresh.
