Ingredients
- 1 lb chicken breast, sliced thinly
- 2 medium zucchinis, halved and sliced
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon olive oil
- 1 teaspoon cornstarch (optional, for thickening)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium-high heat.
- Add the chicken, seasoning lightly with salt and pepper, and cook until browned, about 5-7 minutes.
- Stir in the onion and garlic, cooking until fragrant.
- Toss in the zucchini and bell pepper, and continue to stir-fry for an additional 3-4 minutes until they are tender-crisp.
- Drizzle soy sauce over the mixture. If using, mix cornstarch with a splash of water and stir into the pan for extra thickness. Cook for another minute until everything is well coated and heated through.

Notes
For a more robust flavor, marinate the chicken in soy sauce and sesame oil beforehand. Feel free to swap the vegetables based on seasonality or personal preference.
