Description

A vibrant stir-fry featuring tender chicken and fresh zucchini, bursting with flavor and nutrition.


Ingredients

  • 1 lb chicken breast, sliced thinly
  • 2 medium zucchinis, halved and sliced
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon olive oil
  • 1 teaspoon cornstarch (optional, for thickening)
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pan over medium-high heat.
  2. Add the chicken, seasoning lightly with salt and pepper, and cook until browned, about 5-7 minutes.
  3. Stir in the onion and garlic, cooking until fragrant.
  4. Toss in the zucchini and bell pepper, and continue to stir-fry for an additional 3-4 minutes until they are tender-crisp.
  5. Drizzle soy sauce over the mixture. If using, mix cornstarch with a splash of water and stir into the pan for extra thickness. Cook for another minute until everything is well coated and heated through.
  6. Serve warm and enjoy!

Notes

For a more robust flavor, marinate the chicken in soy sauce and sesame oil beforehand. Feel free to swap the vegetables based on seasonality or personal preference.
