Description

A vibrant and nourishing salad featuring chickpeas, creamy feta, and avocado, drizzled with a zesty dressing.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 avocado, diced
  • 1 cup feta cheese, crumbled
  • ¼ red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper, to taste


Instructions

  1. Begin by preparing your ingredients. Drain and rinse the chickpeas, then toss them into a large mixing bowl.
  2. Add the cherry tomatoes, cucumber, diced avocado, crumbled feta, red onion, and parsley to the bowl.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to create the dressing.
  4. Pour the dressing over the salad and gently toss everything together until evenly coated.
  5. Taste and adjust seasoning if necessary, adding more lemon juice, salt, or pepper to suit your preferences.

Notes

For best results, add avocado just before serving to maintain freshness. This salad can be served alone or paired with grilled chicken or fish.
