Description

A crowd-pleasing chicken dish marinated in zesty lime and spicy chili flavors, perfect for gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup lime juice (freshly squeezed)
  • 2 tablespoons chili powder
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh cilantro for garnish (optional)


Instructions

  1. In a bowl, whisk together lime juice, chili powder, olive oil, minced garlic, salt, and pepper.
  2. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them, ensuring they are well coated.
  3. Seal the bag or cover the dish and refrigerate for at least 30 minutes.
  4. Preheat your grill or oven to medium-high heat (about 375°F).
  5. Remove the chicken from the marinade, letting excess drip off.
  6. Grill for 6-8 minutes per side or bake for 20-25 minutes, until the chicken reaches an internal temperature of 165°F.
  7. Remove from heat, let it rest for a few minutes, then slice and serve.

Notes

For maximum flavor, marinate chicken for a few hours or overnight. Serve with mango salsa or in tacos for a twist.
