Ingredients
- 1.5 pounds skinless, boneless chicken breasts
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tablespoon oregano, chopped
- 2 tablespoons red wine vinegar
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Begin by marinating the chicken. In a bowl, combine olive oil, minced garlic, and a sprinkle of salt and pepper.
- Coat the chicken breasts in the marinade and let them sit for at least 30 minutes (or ideally, a few hours) in the refrigerator.
- While the chicken is marinating, prepare the chimichurri. Finely chop parsley, oregano, and garlic. Mix them with olive oil, red wine vinegar, salt, and red pepper flakes.
- Preheat your grill over medium-high heat. Once hot, add the marinated chicken.
- Grill the chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
- Once cooked, allow the chicken to rest for a few minutes before slicing it.
- Serve the sliced chicken in bowls, topped generously with chimichurri sauce.
Notes
For extra flavor, marinate the chicken overnight if possible. Serve with sides like roasted veggies or a fresh salad.
