Description

Juicy chicken thighs marinated in a smoky chipotle honey sauce, paired with creamy smoked gouda mashed potatoes for a comforting dish perfect for gatherings.


Ingredients

  • 4 chicken thighs (bone-in and skin-on)
  • 2 tablespoons honey
  • 2 chipotle peppers in adobo sauce, minced
  • 2 tablespoons olive oil
  • 4 garlic cloves, crushed
  • 2 cups smoked gouda cheese, shredded
  • 4 medium potatoes (Yukon Gold or Russet), peeled and chopped
  • 3 tablespoons butter
  • ½ cup milk or cream
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)


Instructions

  1. In a bowl, mix honey, minced chipotle peppers, olive oil, and crushed garlic. Coat the chicken thighs in the marinade and let them sit for at least 30 minutes.
  2. While the chicken marinates, peel and chop potatoes. Boil in salted water until fork-tender. Drain and return to pot.
  3. Preheat the oven to 375°F (190°C). Arrange the marinated chicken on a baking sheet and roast for about 25-30 minutes or until cooked through and golden.
  4. Add butter, smoked gouda, and milk to the boiled potatoes. Mash until creamy and smooth, adjusting the consistency with more milk if needed. Season with salt and pepper to taste.
  5. Once the chicken is done, let it rest for a few minutes before serving. Plate the gouda mashed potatoes with the chicken thighs on top, garnished with fresh herbs if desired.

Notes

For enhanced flavor, let the chicken marinate overnight if possible. Use an instant-read thermometer to ensure chicken reaches 165°F (75°C).
