Description

Delicious grilled chicken burritos wrapped in soft tortillas, enhanced with zesty chipotle ranch dressing and fresh veggies.


Ingredients

  • 1 lb chicken breast, boneless and skinless
  • 1/2 cup chipotle ranch dressing (store-bought or homemade)
  • 4 large tortillas (flour or whole wheat)
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced onions (optional)
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving


Instructions

  1. Combine the chicken breast and half of the chipotle ranch dressing in a bowl. Mix well, ensuring the chicken is coated. Let marinate for at least 15 minutes.
  2. Preheat your grill or grill pan over medium-high heat. Once hot, place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from heat and let rest for a few minutes before slicing.
  3. Warm the tortillas on the grill for about 30 seconds on each side until they’re pliable.
  4. Assemble the burritos by placing a generous portion of grilled chicken in the center of each tortilla. Top with lettuce, tomatoes, cheese, onions, and a drizzle of the remaining chipotle ranch dressing.
  5. Fold in the sides of the tortilla and roll it up from the bottom to create your burrito. Repeat with the remaining tortillas.
  6. Serve immediately, garnished with fresh cilantro and lime wedges.

Notes

Feel free to customize with additional fillings like black beans or corn. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
