Deliciously marinated grilled chicken wrapped in warm tortillas, customizable with your favorite toppings.
Ingredients
- 2 large chicken breasts
- 1 cup chipotle ranch dressing
- 1 cup shredded cheese (cheddar or blend)
- 1 cup cooked rice (white or brown)
- 1 cup black beans (drained and rinsed)
- 1 cup corn (canned or frozen)
- 4 large flour tortillas
- Optional toppings: diced tomatoes, lettuce, avocado, or cilantro
Instructions
- Begin by marinating the chicken breasts in half of the chipotle ranch dressing for at least 30 minutes.
- Preheat your grill to medium-high heat. Once heated, cook the marinated chicken for about 6-7 minutes on each side or until fully cooked through.
- Remove the chicken from the grill and let it rest for a few minutes before slicing it into strips.
- Warm the tortillas on the grill for about 1 minute, making them pliable.
- Assemble each tortilla by layering rice, black beans, corn, sliced chicken, cheese, and a drizzle of the remaining chipotle ranch dressing.
- Roll the tortillas tightly, folding in the sides as you go.
- Optionally, you can grill the assembled burritos for an additional 2 minutes on each side for a crunchy exterior.
