Description

Deliciously marinated grilled chicken wrapped in warm tortillas, customizable with your favorite toppings.


Ingredients

  • 2 large chicken breasts
  • 1 cup chipotle ranch dressing
  • 1 cup shredded cheese (cheddar or blend)
  • 1 cup cooked rice (white or brown)
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn (canned or frozen)
  • 4 large flour tortillas
  • Optional toppings: diced tomatoes, lettuce, avocado, or cilantro


Instructions

  1. Begin by marinating the chicken breasts in half of the chipotle ranch dressing for at least 30 minutes.
  2. Preheat your grill to medium-high heat. Once heated, cook the marinated chicken for about 6-7 minutes on each side or until fully cooked through.
  3. Remove the chicken from the grill and let it rest for a few minutes before slicing it into strips.
  4. Warm the tortillas on the grill for about 1 minute, making them pliable.
  5. Assemble each tortilla by layering rice, black beans, corn, sliced chicken, cheese, and a drizzle of the remaining chipotle ranch dressing.
  6. Roll the tortillas tightly, folding in the sides as you go.
  7. Optionally, you can grill the assembled burritos for an additional 2 minutes on each side for a crunchy exterior.

Notes

Serve with fresh salsa, guacamole, or tortilla chips for added crunch.
