Description
Bright and flavorful chicken bowls with cilantro and lime, perfect for meal prep or a refreshing dinner.
Ingredients
- 1 pound Boneless, skinless chicken breasts
- 1/2 cup Fresh cilantro, chopped
- Juice of 2 Fresh limes
- 2 tablespoons Olive oil
- 2 cloves Garlic, minced
- 2 cups Cooked rice (brown or white)
- 1 cup Cherry tomatoes, halved
- 1 Avocado, sliced
- 1 can Black beans, rinsed and drained
- Salt and pepper, to taste
- Optional toppings: diced onions, jalapeños, or shredded cheese
Instructions
- Begin by marinating the chicken. In a mixing bowl, combine olive oil, lime juice, minced garlic, salt, and pepper. Add chicken and coat well. Let it marinate for at least 15 minutes.
- Heat a skillet over medium-high heat. Once hot, add the chicken, cooking for about 8-10 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the pan and let it rest.
- While the chicken rests, prepare the rice if you haven’t done so already.
- Slice the chicken into strips. In your serving bowls, layer cooked rice, followed by black beans, cherry tomatoes, and avocado.
- Place the sliced chicken atop the bowls and sprinkle with chopped cilantro. Drizzle with additional lime juice right before serving.
Notes
For added flavor, grill the chicken instead of sautéing. Use rotisserie chicken for a time-saving option.
