Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup buttermilk (or milk plus vinegar)
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar
- Extra cinnamon for swirling
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, mix together the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon.
- In another bowl, combine buttermilk, vegetable oil, eggs, and vanilla extract, whisking until well blended.
- Pour the wet ingredients into the dry mixture, folding gently until just combined.
- In a separate bowl, mix brown sugar with an additional teaspoon of cinnamon to create the swirl mixture.
- Spread half of the batter into the prepared dish. Sprinkle half of the cinnamon-sugar mixture over the batter.
- Top with the remaining batter, spreading evenly, then sprinkle the rest of the cinnamon sugar mixture on top.
- Bake for 35 to 40 minutes or until a toothpick inserted into the center comes out clean.
Notes
Best served warm with vanilla ice cream or whipped cream. For a creative twist, add nuts or dried fruit.
