Description

A comforting casserole with creamy rice, tender chicken, and a crispy cheese topping, perfect for cozy dinners.


Ingredients

  • 1½ cups long grain white rice
  • 2 cans cream of chicken or cream of mushroom soup
  • 1 cup water
  • 2 cups milk
  • 1 envelope onion soup mix
  • 3 boneless skinless chicken breasts (or thighs)
  • 1½ cups shredded cheddar cheese
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish thoroughly.
  2. In a mixing bowl, combine the rice, cream of chicken or mushroom soup, milk, water, and onion soup mix until well blended.
  3. Pour this mixture into the prepared baking dish.
  4. Gently stir in half of the shredded cheddar cheese, then nestle the chicken pieces on top.
  5. Cover the dish with aluminum foil and bake for 1.5 to 2 hours, until the chicken is fully cooked.
  6. After removing the foil, sprinkle the remaining cheddar cheese over the top and bake for an additional 5-10 minutes or until the cheese is melted and bubbly.
  7. Allow the casserole to rest for 15-20 minutes before serving.

Notes

Consider seasoning the chicken with herbs for extra flavor. You can add vegetables like broccoli for additional nutrients.
