Ingredients
- 1½ cups long grain white rice
- 2 cans cream of chicken or cream of mushroom soup
- 1 cup water
- 2 cups milk
- 1 envelope onion soup mix
- 3 boneless skinless chicken breasts (or thighs)
- 1½ cups shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish thoroughly.
- In a mixing bowl, combine the rice, cream of chicken or mushroom soup, milk, water, and onion soup mix until well blended.
- Pour this mixture into the prepared baking dish.
- Gently stir in half of the shredded cheddar cheese, then nestle the chicken pieces on top.
- Cover the dish with aluminum foil and bake for 1.5 to 2 hours, until the chicken is fully cooked.
- After removing the foil, sprinkle the remaining cheddar cheese over the top and bake for an additional 5-10 minutes or until the cheese is melted and bubbly.
- Allow the casserole to rest for 15-20 minutes before serving.
